THE MOST BEAUTIFUL TIME

Hello everyone!

The most beautiful time of the year is just around the corner. It is the time of the year everyone loves and waits for all year, Christmas. Not only that I will receive lots of presents from my husband (hope he reads this), but mostly because I love baking Christmas sweets!!!!

Where I come from, the Czech Republic, baking and eating Christmas sweets means something very beautiful, something that happens only once a year and that is why it is so special. It brings the family together, mums and kids bake and decorate together, it brings friends together who come to one friend's house and bake as a group. Christmas cookies are on the table in every home whenever someone comes for visit.

It is a crazy busy time too because it all has to be ready a couple of weeks before Christmas to set properly, mums who bake still go to work and have to do this in the evenings, at nights or on the weekend. These cookies are not usually quick to make. To be honest, it takes days to make a couple of trays with cookies. First there is a dough that needs to set in the fridge overnight, then you take it out to soften, roll out, cut out cookies, bake, let cool, next day you decorate and then you keep them in a cool place until Christmas comes. Funny thing actually is that a half of those is eaten way before Christmas as everyone knows too well where they are kept (but they all swear they have not touched them).

Two sayings come with Christmas cookies - before and after Christmas. Before Christmas you hear: 'Don't eat them or we will have nothing on Christmas day!' And sometimes they still are in the fridge when January comes and then there is a after Christmas saying: 'Here, have another cookie, I'm not gonna throw it away!'

I have started my Christmas baking in Sydney for Czech and Slovak people here a few days ago. I have not stopped for days, just baking, decorating cooling, receiving orders. It is a hard job, it takes ages and the heat is not helpful either, but it SO DAMN WORTH IT!
