GLUTEN-FREE SOURDOUGH BREAD - gluten-free sourdough starter and gluten-free flours

I love baking with Sourdough, that is not a new thing..

I have two Sourdough starters at the moment - George II. and Sammy.

George II. is a 100 yrs old sourdough starter which contains gluten and it is fed by rye flour, wholemeal, spelt or white bread flour (depending on what type of bread I am baking).

Sammy is a gluten-free one, being fed by white rice flour.

I bake with George II. a lot, but whenever I get a chance to bake a gluten-free Sourdough bread using Sammy, it just gets onto a different level. I have to use only gluten-free flours which makes it more difficult and more expensive. I make my own brown rice and quinoa flour and together with other gluten-free flours, such as millet, tapioca, buckwheat, potato flour, the bread gets all those nice flavours mixed together.

This morning I baked a Gluten-free Sourdough loaf for Sophie (please notice the beautiful S on top) with black & white sesame seeds and poppy seeds on top.
